To keep this my rotisserie chicken soup budget-friendly I use Costco rotisserie chickens. They’re the most affordable option in our area and really help stretch the grocery budget, which makes a big difference when trying to keep food costs under control. More money for berries, right? This is one of my favorite Costco Tips! When you buy a few Costco rotisserie chickens, you can also stock your freezer with homemade chicken stock or bone broth at the same time. I love having chicken broth on hand, so I freeze mine in 2 cup Souper Cubes so they're easy to use when I need them. If you don’t have an Instant Pot, you can also make chicken stock in a slow cooker, just cook it on low for about 12 hours.
